He also imparts extra flavor by brining the bellies for up to 10 days.

John left his USDA inspection job to start his own processing plant in 1986 and opened the smokehouse a year later. "The time to do it right -- that's exactly the difference," John says. "Nobody wants to take the time today. It's all production."
